Recipe Month – Recipe 6

This is a recipe my daughter makes often for her family.  She made it for us the other day and it was so yummy that I got the recipe off her for you.


Yummy Pasta Sauce


*  3x  cans of chopped tomatoes

*  2x large cloves of garlic, crushed

*  1x onion/scallion, chopped

*  1x carrot, grated

*  200g mushrooms, roughly chopped

*  3x celery stalks, chopped and or/ two small capsicums and/or any other vegetables you have in the fridge.

*  1 Tbls oregano (or to taste)

*  1 Tbls basil (or to taste)

*  Salt and pepper to taste


Sauté the garlic and onion in the olive oil in a big saucepan.

Add celery and/or capsicum and slightly soften.

Add tomatoes, mushrooms, oregano and basil and heat through.

Simmer (stirring regularly) until all vegetables are softened.

Add grated carrot and a swirl of olive oil (cold-pressed, extra-virgin olive oil).

Season to taste (adding more oregano and basil if needed).


on wholemeal spaghetti with a sprinkle of pecorino on top and with a green salad.
