Recipe Month – Recipe 1

This is my first recipe for you for October Recipe Month.  It’s an easy recipe – it’s so easy that you can teach it to any child who is able to chop veggies.

Bacon and Potato Bake

Serves 4

Ingredients:

*  4 large potatoes, (leave unpeeled if you use organic) cut into cubes

*  150 grams (6 oz) bacon slices, cut into bite-sized pieces

*  2 tsp olive oil

*  ¼ tsp dried rosemary or 1 tsp fresh rosemary (finely chopped)

*  Sea salt

*  Black pepper

Instructions:

Preheat oven to 450°F (230° Centigrade).

Oil your baking dish.

Arrange the potato cubes in the baking dish.

Sprinkle with rosemary, olive oil and salt and pepper. Toss well.

Top with the bacon and bake in the oven for about 45 minutes or until the potatoes are tender and the bacon crisp.

Enjoy this easy-to-bake dish with a green salad, frozen veggies or even with cauliflower cheese.

Double the ingredients for a larger family or to have left-overs for lunch tomorrow.
