Here’s another easy recipe that you can teach your child to make for the family. Double it up to serve a larger family.
To make the meal more healthy, use brown rice. It takes longer to cook, but it is 100% wholefood and contains many nutrients. If you are just starting with brown rice, go for half white, half brown. Start cooking the brown rice and then add the white rice 15 minutes before the end of cooking.
Salmon Rice Pie
Serves about 3 – 4
Ingredients:
* 1 cup cooked rice
* 1 onion, finely chopped
* 2 tbsp butter or margarine
* 1 tsp curry powder
* 1 can red salmon
* 2 eggs, lightly beaten
* ¾ cup cheddar cheese, shredded
* ½ cup milk
* 1 Tbsp parsley
Instructions:
Preheat oven to 180 Centigrade (350 Fahrenheit).
In a bowl, mix together the cooked rice, onion, butter and curry powder and press into the base of a pie dish.
In a separate bowl, mix together the remaining ingredients and pour over the rice base.
Bake in the oven for about 40-45 minutes.
Serve with a tossed green salad.
